Minimalist Honey-Glazed Sweet Potato

- 2 medium sweet potatoes
- 3 tbsp honey
- 1 tbsp unsalted butter
Instructions
- Step 1: Preheat oven to 400°F. Peel and cut 2 medium sweet potatoes into 1/2-inch thick wedges. Toss with 1 tbsp unsalted butter until evenly coated.
- Step 2: Spread sweet potato wedges in a single layer on a parchment-lined baking sheet. Roast for 20 minutes, flipping halfway through, until edges are golden and tender when pierced with a fork.
- Step 3: While potatoes roast, whisk 3 tbsp honey with remaining 1 tbsp unsalted butter in a small bowl. After 20 minutes, remove potatoes from oven and brush generously with honey-butter mixture.
- Step 4: Return to oven for 5 more minutes until glaze is bubbling and caramelized. Serve immediately while hot.
