Miso-Glazed Shrimp with Bok Choy and Sesame

Ingredients
- 12 oz, peeled and deveined shrimp
- 2 tbsp white miso paste
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 12 oz, trimmed and halved bok choy
- 1 clove, minced garlic
- 1 tsp toasted sesame seeds
- 1/4 tsp sea salt
Instructions
- Step 1: Whisk miso paste, rice vinegar, 1 tsp sesame oil, and 1/4 tsp salt until smooth. Set aside.
- Step 2: Heat a large skillet over medium-high heat. Add shrimp and cook for 2 minutes per side until pink and opaque. Remove shrimp and set aside.
- Step 3: Add minced garlic to the skillet and cook for 30 seconds until fragrant. Add bok choy and 2 tbsp water, cover, and steam for 4 minutes until tender.
- Step 4: Return shrimp to the skillet, add miso glaze, and toss to coat evenly. Cook for 1 minute until sauce thickens. Sprinkle with toasted sesame seeds and serve immediately.
