Miso-Infused Roasted Sweet Potatoes

Ingredients
- 2 lbs, peeled and cut into 3/4-inch cubes sweet potatoes
- 2 tbsp white miso paste
- 1 tbsp maple syrup
- 1/2 tsp smoked paprika
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 425°F (220°C). Toss sweet potato cubes with sesame oil, salt, and smoked paprika until evenly coated.
- Step 2: Spread potatoes in a single layer on a parchment-lined baking sheet.
- Step 3: Roast for 20 minutes, then flip cubes and drizzle with miso paste mixed with maple syrup.
- Step 4: Return to oven and roast for 15-18 more minutes until edges are caramelized and tender when pierced with a fork.
- Step 5: Sprinkle with toasted sesame seeds and serve warm.
