Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tbsp olive oil
- 1/2, thinly sliced lemon
- 1 tsp, leaves fresh thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp butter
Instructions
- Step 1: Pat 4 bone-in, skin-on chicken thighs dry with paper towels and season with 1/4 tsp salt and 1/4 tsp black pepper on both sides.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook for 10-12 minutes without moving until skin is deeply golden and crispy.
- Step 3: Flip the thighs and add 1/2 lemon, thinly sliced, and 1 tsp fresh thyme leaves to the skillet. Cook for an additional 5-7 minutes until internal temperature reaches 165°F (74°C), then transfer to a plate and let rest for 5 minutes.
