  2. Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook for 10-12 minutes without moving until skin is deeply golden and crispy.
  3. Step 3: Flip the thighs and add 1/2 lemon, thinly sliced, and 1 tsp fresh thyme leaves to the skillet. Cook for an additional 5-7 minutes until internal temperature reaches 165°F (74°C), then transfer to a plate and let rest for 5 minutes.
