Sear-Roasted Beef Tenderloin with Rosemary and Garlic

Ingredients
- 1.5 lbs (680g) Beef tenderloin, trimmed
- 2 tbsp Olive oil
- 1 tbsp Fresh rosemary, finely chopped
- 4 cloves Garlic cloves, minced
- 3 tbsp Unsalted butter
- 1 tsp Salt
- 1/2 tsp Black pepper
- 12 oz (340g) Asparagus, trimmed
Instructions
- Step 1: Preheat oven to 400°F (200°C). Pat beef dry with paper towels and season evenly with salt and pepper on all sides. Heat 1 tbsp olive oil in an oven-safe skillet over medium-high heat until shimmering.
- Step 2: Sear beef for 2-3 minutes per side until deep golden brown, then transfer skillet to oven. Roast for 15-18 minutes for medium-rare (internal temperature 125°F/52°C), or until desired doneness.
- Step 3: While beef rests, toss asparagus with 1 tbsp olive oil, salt, and pepper. Spread on baking sheet and roast for 10-12 minutes until tender-crisp.
- Step 4: Melt butter in skillet over medium heat. Add minced garlic and rosemary, cooking 1 minute until fragrant but not browned.
- Step 5: Slice beef and serve with asparagus, drizzling with rosemary-garlic butter.
