Shrimp and Snap Pea Stir-Fry with Zucchini Noodles

Ingredients
- 12 oz shrimp
- 2 medium zucchini
- 1 cup snap peas
- 2 tbsp avocado oil
- 3 cloves garlic
- 1/4 cup fresh cilantro
- 1 tbsp lime juice
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Step 1: Spiralize zucchini into noodles, then pat dry with paper towels. Heat 1 tbsp avocado oil in a large skillet over medium-high heat.
- Step 2: Add shrimp, 1/2 tsp sea salt, and 1/4 tsp black pepper. Sauté for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- Step 3: Add remaining 1 tbsp avocado oil, minced garlic, and snap peas to the skillet. Stir-fry for 3 minutes until peas are bright green. Add zucchini noodles and 1 tbsp lime juice, tossing until heated through and tender-crisp. Return shrimp to pan, stir in 1/4 cup chopped cilantro, and cook 1 more minute.
