Stir-Fried Gingered Chicken with Broccoli

Ingredients
- 6 oz chicken breast
- 1.5 cups broccoli
- 1 tbsp ginger
- 2 tbsp coconut aminos
- 1 tsp sesame oil
- 1 tsp olive oil
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Step 1: Slice 6 oz chicken breast into 1/2-inch strips. Season with 1/4 tsp sea salt and 1/8 tsp black pepper. Mince 1 tbsp fresh ginger and set aside.
- Step 2: Heat 1 tsp olive oil and 1 tsp sesame oil in a large skillet over medium-high heat until shimmering.
- Step 3: Add chicken strips and stir-fry for 5-6 minutes until golden brown and cooked through, removing from pan as it finishes.
- Step 4: Add 1.5 cups broccoli florets to the skillet with a splash of water, cover, and steam for 3 minutes until bright green.
- Step 5: Return chicken to pan, add 2 tbsp coconut aminos and minced ginger, and toss for 1 minute until sauce thickens and coats everything.
