- 1 pound ground beef
- 2 tablespoons avocado oil
- 1 medium carrot
- 1 cup broccoli
- 1/2 cup mushrooms
- 3 cloves garlic
- 2 tablespoons coconut aminos
- 1 tablespoon lime juice
- 1/4 teaspoon red pepper flakes
- 2 cups cauliflower rice
Instructions
- Step 1: Heat 2 tablespoons avocado oil in a large skillet over medium-high heat until shimmering. Add 1 medium thinly sliced carrot and 1 cup broccoli florets, cooking for 3 minutes until slightly tender.
- Step 2: Add 1/2 cup sliced mushrooms and 3 minced garlic cloves, cooking for 2 minutes until fragrant and mushrooms soften.
- Step 3: Add 1 pound ground beef, breaking it apart with a spoon, and cook for 5 minutes until no longer pink, then drain excess fat.
- Step 4: Stir in 2 tablespoons coconut aminos, 1 tablespoon lime juice, 1/4 teaspoon red pepper flakes, and salt and pepper to taste. Cook for 2 minutes until sauce bubbles and coats the beef.
