Summer Market Grilled Chicken Salad
Juicy grilled chicken served atop a bed of crisp greens with a honey-dijon vinaigrette.

Ingredients
- 2 boneless, skinless chicken breast
- 2 tbsp olive oil
- 1 tbsp dijon mustard
- 1 tbsp honey
- 1/2 lemon
- 4 cups mixed greens
- 1/2 medium cucumber
- 1/4 cup thinly sliced radishes
- 2 tbsp minced red onion
Instructions
- Step 1: Pound chicken breasts to 1-inch thickness. Whisk 1 tbsp olive oil, dijon mustard, honey, and lemon zest in a bowl.
- Step 2: Coat chicken with 2/3 of the marinade, let sit 15 minutes while preheating grill to medium-high.
- Step 3: Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C), then rest 5 minutes before slicing.
- Step 4: Toss mixed greens with remaining marinade, cucumber, radishes, and red onion in a large bowl.
- Step 5: Divide salad among plates, top with sliced chicken and a drizzle of extra vinaigrette.
