  1. Step 1: Pound chicken breasts to 1-inch thickness. Whisk 1 tbsp olive oil, dijon mustard, honey, and lemon zest in a bowl.
  2. Step 2: Coat chicken with 2/3 of the marinade, let sit 15 minutes while preheating grill to medium-high.
  3. Step 3: Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C), then rest 5 minutes before slicing.
  4. Step 4: Toss mixed greens with remaining marinade, cucumber, radishes, and red onion in a large bowl.
  5. Step 5: Divide salad among plates, top with sliced chicken and a drizzle of extra vinaigrette.
