Sunbeam-Strawberry and Arugula Salad

- 1 cup, hulled and quartered fresh strawberries
- 4 cups fresh arugula
- 3 tbsp extra-virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp honey
- 1/4 tsp sea salt
- 1/8 tsp cracked black pepper
- 1/4 cup shaved parmesan cheese
Instructions
- Step 1: In a small bowl, whisk together 3 tbsp extra-virgin olive oil, 2 tbsp fresh lemon juice, 1 tbsp honey, 1/4 tsp sea salt, and 1/8 tsp cracked black pepper until emulsified.
- Step 2: In a large salad bowl, combine 4 cups fresh arugula and 1 cup hulled, quartered strawberries. Pour the dressing over the greens and toss gently until evenly coated.
- Step 3: Divide the salad among plates, then sprinkle 1/4 cup shaved parmesan cheese over each serving just before serving to maintain freshness.
