Blueberry-Maple Glazed Salmon

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 1/4 cup pure maple syrup
- 1/4 cup fresh blueberries
- 2 tbsp white wine vinegar
- 1 tbsp cornstarch
- 1 tbsp water
- 1/2 tsp garlic powder
- to taste salt
- to taste freshly ground black pepper
- 2 tbsp olive oil
Instructions
- Step 1: Season 4 salmon fillets (6 oz each, skin-on) with salt and freshly ground black pepper on both sides.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Place the salmon fillets skin-side down and cook for 4 minutes until the skin is crispy. Flip and cook for 3 more minutes.
- Step 3: In a small bowl, whisk together 1/4 cup pure maple syrup, 1/4 cup fresh blueberries, 2 tbsp white wine vinegar, and 1/2 tsp garlic powder.
- Step 4: In another small bowl, mix 1 tbsp cornstarch and 1 tbsp water to make a slurry.
- Step 5: Pour the blueberry mixture into the skillet with the salmon, then add the cornstarch slurry. Cook for 2 minutes, stirring, until the sauce thickens and coats the salmon.
- Step 6: Serve immediately with additional blueberries for garnish.
