Grilled Chicken Keto Caesar Salad

Ingredients
- 2 (6 oz each), boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 4 cups, chopped romaine lettuce
- 1/2 cup, halved cherry tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 clove, minced garlic
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 2 tbsp grated parmesan cheese
- 1/4 tsp salt
Instructions
- Step 1: Season chicken breasts with 1/2 tsp salt, 1/4 tsp black pepper, and 1/2 tsp garlic powder. Heat 1 tbsp olive oil in a skillet over medium-high heat. Cook chicken for 5-6 minutes per side until golden and cooked through. Let rest, then slice.
- Step 2: Whisk together 2 tbsp olive oil, 1 tbsp lemon juice, 1 minced garlic clove, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, 1/4 tsp salt, and 1/8 tsp black pepper to make dressing.
- Step 3: Toss chopped romaine lettuce and halved cherry tomatoes with 2 tbsp dressing. Divide salad among plates, arrange sliced chicken on top, and drizzle with remaining dressing. Sprinkle with 2 tbsp grated parmesan.
