Instructions
- Step 1: Preheat oven to 325°F. Pat dry 4-pound beef brisket and season all over with 2 tsp salt and 1 tsp black pepper.
- Step 2: In a small bowl, combine 6 minced garlic cloves, 1/4 cup Dijon mustard, 1/4 cup honey, and 2 tbsp olive oil to create the glaze.
- Step 3: Place the brisket fat side up in a roasting pan. Brush the honey-mustard garlic glaze generously over the entire brisket.
- Step 4: Pour 1 cup beef broth into the bottom of the roasting pan and tuck 4 fresh thyme sprigs around the brisket.
- Step 5: Cover the roasting pan tightly with foil and roast for 3 hours. Remove the foil and baste the brisket with pan juices. Roast uncovered for an additional 45 minutes until the glaze is caramelized and brisket is fork-tender.
- Step 6: Let the brisket rest for 15 minutes before slicing thinly against the grain. Serve drizzled with pan juices.
