Instructions
- Step 1: Preheat oven to 400°F (200°C). In a small bowl, whisk together 3 tbsp maple syrup, 1 tbsp finely grated fresh ginger, 3 minced garlic cloves, 2 tbsp soy sauce, and 1 tbsp olive oil to make the glaze.
- Step 2: Place 4 halved Brussels sprouts on a rimmed baking sheet. Drizzle with 1 tbsp olive oil and sprinkle with 1/2 tsp salt and 1/4 tsp black pepper. Toss to coat evenly and spread in a single layer.
- Step 3: Roast Brussels sprouts for 15 minutes, stirring once halfway through until edges are caramelized.
- Step 4: Remove the pan from oven and push Brussels sprouts to the sides. Place 4 salmon fillets skin-side down in the center and brush each fillet generously with the maple-ginger glaze.
- Step 5: Return the pan to the oven and roast for an additional 12-15 minutes until salmon is opaque and flakes easily with a fork, and glaze is sticky.
- Step 6: Serve salmon with the roasted Brussels sprouts immediately, spooning any glaze from the pan over the top.
