Stir-Fried Chicken with Black Bean Sauce and Bok Choy

Ingredients
- 1 pound, thinly sliced Chicken breast
- 2 heads, halved lengthwise Bok choy
- 3 tablespoons Black bean sauce
- 1 tablespoon Soy sauce
- 1 tablespoon Rice wine
- 2 cloves, minced Garlic
- 1 tablespoon, minced Ginger
- 2 tablespoons Vegetable oil
- 2 cups Cooked rice
- 2, sliced Green onions
Instructions
- Step 1: In a small bowl, whisk together 3 tablespoons black bean sauce, 1 tablespoon soy sauce, 1 tablespoon rice wine, 2 minced garlic cloves, and 1 tablespoon minced ginger. Set aside.
- Step 2: Heat 2 tablespoons vegetable oil in a large skillet over high heat until shimmering. Add 1 pound thinly sliced chicken breast and stir-fry for 5 minutes until golden and cooked through. Remove chicken and set aside.
- Step 3: Add 2 halved bok choy to the skillet and stir-fry for 2 minutes until slightly wilted. Return chicken to the skillet, pour in the sauce mixture, and stir-fry for 2 minutes until sauce thickens and coats ingredients.
- Step 4: Serve over 2 cups cooked rice, garnished with 2 sliced green onions.
